Rice with sea urchins and
red prawns |

Ingredients
(for 4 people)
400 gr. rice
600gr. red prawn
4 50 gr. sea urchin roes tins
1,5 l. fish stock
1 salmorreta sauce spoon (garlic, ñora and crushed
tomato)
Saffron, chopped parsley and olive oil

Elaboration
In a paella pan lightly fry the red prawns with any oil
letting then half cooked. Take off the prawns and the sliced
garlic, the rice and the salmorreta sauce. Add any fish
stock and let it boil during 5 minutes.
Then add the sea urchin roes, saffron and salt garnishing
the dish with the prawns and parsley.

Sea urchin roes with hake |
|
Ingredients for 6 people:
6 good quality hake slices
3 50gr. sea urchin roes tins
Half fried potato slices
Oil, white wine, white pepper, onion, peas, asparaguses, parsley,
garlic and salt.

Elaboration
Put the chopped onion, the parsley and the garlic in a pan
with oil and fry lightly. Add any wine and season with salt
and pepper. Cover everything with the potatoes and put the
hake slices above (previously lightly fried).
Take some spoonfuls of the stock to smash the sea urchin
roes and place the mixture on the hake slices. Put the peas
and the asparaguses among the hake slices. Cook in the oven
for 20 minutes.
